Thickness
For salmon fillets 1 inch thick or thinner, bake at 400°F (200°C) for 12-15 minutes.
For salmon fillets between 1-2 inches thick, bake at 400°F (200°C) for 15-20 minutes.
For salmon steaks or fillets over 2 inches thick, bake at 400°F (200°C) for 18-25 minutes.
Doneness
Salmon is fully cooked and safe to eat when the flesh is opaque and flakes easily with a fork. For medium-rare, it will be translucent and pink in the center.
Temperature
An instant-read food thermometer inserted into the thickest part of the fillet, not touching bone, should register 145°F (63°C). The fish will continue to rise another 5 degrees as it rests.
