Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup heavy cream or half-and-half
  • 1 1/2 cups grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Kosher salt
  • Freshly ground black pepper

Instructions:

  1. In a medium saucepan, melt the butter over medium heat.
  2. Whisk in the heavy cream or half-and-half.
  3. Bring the mixture to a gentle simmer and cook, whisking frequently, until thickened, about 5 minutes.
