Ingredients
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup (75g) butter, softened
- 3/4 cup (150g) sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (340g) mashed very ripe bananas (about 3 medium)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda and salt.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Mash the bananas with a fork in a small bowl until mostly smooth.
- Stir the banana mixture into the butter mixture.
- Stir the dry ingredients into the wet ingredients just until combined.
- Pour batter into the prepared loaf pan.
