Ingredients

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup (75g) butter, softened
  • 3/4 cup (150g) sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (340g) mashed very ripe bananas (about 3 medium)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda and salt.
  3. In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Mash the bananas with a fork in a small bowl until mostly smooth.
  6. Stir the banana mixture into the butter mixture.
  7. Stir the dry ingredients into the wet ingredients just until combined.
  8. Pour batter into the prepared loaf pan.
  9. Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then remove from pan and cool completely on a wire rack before slicing.
