Fried rice is a simple and delicious way to use up leftover rice. Here are the basic steps to make fried rice:
- Heat vegetable or olive oil in a wok or large skillet over medium-high heat.
- Add diced vegetables like onion, carrot, celery, bell peppers, broccoli, etc. Stir fry for 2-3 minutes until start to soften.
- Add cooked and chilled rice (day-old rice works best). Break up any clumps with a wooden spoon or spatula.
- Fry the rice, stirring constantly, for 5-7 minutes until heated through and starting to become crispy on the bottom.
- Push rice to the sides of the wok/pan and add protein like diced chicken, shrimp, beef or tofu. Cook for 2-3 minutes until no longer pink.
- Stir protein and vegetables into the rice. Season with soy sauce, rice vinegar, sesame oil, salt and pepper to taste.
- Serve fried rice hot, garnished with sliced green onions, sesame seeds, Sriracha or kecap manis if desired.
