Fried rice is a simple and delicious way to use up leftover rice. Here are the basic steps to make fried rice:

  1. Heat vegetable or olive oil in a wok or large skillet over medium-high heat.
  2. Add diced vegetables like onion, carrot, celery, bell peppers, broccoli, etc. Stir fry for 2-3 minutes until start to soften.
  3. Add cooked and chilled rice (day-old rice works best). Break up any clumps with a wooden spoon or spatula.
  4. Fry the rice, stirring constantly, for 5-7 minutes until heated through and starting to become crispy on the bottom.
  5. Push rice to the sides of the wok/pan and add protein like diced chicken, shrimp, beef or tofu. Cook for 2-3 minutes until no longer pink.
  6. Stir protein and vegetables into the rice. Season with soy sauce, rice vinegar, sesame oil, salt and pepper to taste.
  7. Serve fried rice hot, garnished with sliced green onions, sesame seeds, Sriracha or kecap manis if desired.

For variations, try adding scramble eggs, peanut butter or kimchi. Enjoy this classic fried rice dish any time!
