To restock a villager's trades in Minecraft, you need to break and then replace their workstation block.
Villagers acquire new trades by interacting with their workstation, such as a composter, brewing stand, lectern, etc. By breaking and replacing this block, it resets their trades so they will offer a new random set.
To do this, break the workstation block they are linked to using your hand or a tool. Then place the same type of block back in its place. The villager will run back to the new workstation and their trades will restock with new random options.
It may take a few breaks and replaces for all new trades to appear, as they acquire them gradually. But this is the easiest way to refresh a villager's trading hall without needing to cure or breed new villagers.
